Sometimes the most delicious food is the simplest. I love straightforward, wholesome food. I’m also lazy. This quick-and-easy meal was the result of those two very dominant personality traits! It’s probably the easiest chicken recipe I know!
How to do it? Flatten a chicken breast between two sheets of greaseproof paper until it is an even centimeter across. Sprinkle with sumac (my house is full of moroccan style ingredients at the moment!), pepper, salt, and a little lime juice. Fry gently until just done and golden brown, in butter. Ach, why not, butter’s delicious!
I served with avocado sprinkled with salt, pepper and lime, and charred aubergine. Scrummy!
