Over the past few days, you would be forgiven for thinking that Broccoli Tots had taken over the world. Suddenly featured on every food blog under the sun, they were getting the kind of viral buzz usually reserved for cats on Roombas!
Personally, I got seduced by a delicious looking video showing the tots being made, and that’s it, I was as hooked as the next guy. So, tonight I whipped up a batch and bunged them swiftly in the oven (This was the recipe I used).
As they cooked, I realised that I had no idea what you were supposed to serve with a crispy ball of broccoli, cheese and breadcrumbs… Sure I could have gone down the “serve with veg or salad” route, but it didn’t really seem to do this good-but-bad snack food justice.
Dips seemed like a better option. And so I whipped up two tasty (but very different) dips that are just delicious alongside the crispy, cheesy flavour of the Broccoli Tots.
Spicy simple tomato dip
This is almost embarrassingly easy – it’s a waste of time even writing an ingredients list. Simply pour half a tin of quality chopped tomatoes into a saucepan, add a decent squeeze each of lemon, tomato puree and chilli puree, sprinkle in a teaspoon full of smoked paprika, garlic salt and black pepper, and heat.
Serve as a hot dip with the vibrant green tots, once the dip has reduced and its watery any more.
Chive and lemon dip
One hot and slightly spicy dip, and one cool, refreshing one. I found myself switching between the two all the way through, as the flavours were really quite complimentary!
In a bowl, mix crème fraiche, a finely diced clove of garlic, a handful of chopped chives, a sprinkle of smoked paprika, salt and pepper. Add the juice of about half a lemon and stir it all together.
This one is best left for a little while before eating to let the flavours combine – I lasted about 10 minutes before I gave in!
So there you have it – two very different dips that both perfectly compliment broccoli tots. Let me know what you think!
